Spicy Crab Salad



I first discovered this delicious Spicy Crab Salad about 10 years ago and my taste buds instantly fell in love. The juxtaposition of spicy yet sweet imitation crab and freshness of the thin cut cucumbers made this dish a continued favorite between my friends and me. I was determined to figure out the recipe, so one day my friend Samantha and I decided to play around with the ingredients and after 5 years of requests for it at gatherings I can probably make it in my sleep. I've been asked by many people for the recipe and I'm excited for everyone to spread the Spicy Crab love. 

I am forever obsessed with this simple yet delicious recipe because it's easy to make, is always a huge hit at get-togethers, and actually tastes better as a leftover.

This recipe can be altered to one's heat preference. For this post I will base it at a medium-level spiciness, which is what I enjoy. 

Prep Time : 15 min

Make Time: 15 min

Feeds: 8-10 appetizer portions

INGREDIENTS: 

3 large cucumbers

2 lemons

1 package of Japanese imitation crab as pictured (Japanese imitation crab must be used - imitation crab from a seafood aisle is too sweet for recipe) 

1/4 cup Sesame seeds (optional) 


Spicy Mayo:

1 cup light or regular Mayo (Substitute half of it for Greek yogurt for healthier choice)

1/4 cup Siracha 

2 tablespoons honey

INSTRUCTIONS:

1. Thaw out frozen Japanese imitation crab in package (I throw mine in a pot of water on stovetop at medium heat) 


2. While the crab is thawing out, cut your 3 large cucumbers in half the long way. The desired look is a half moon cucumber slice. Take a tablespoon and scoop out the seeds of the cucumber so the middle is hollow. Cut the cucumbers into thin slices creating a half moon shape. Squeeze lemon juice over cucumber. 


3. Next combine spicy mayo ingredients in a cup. Mix together until it is a nice orange color with mayo consistency. To make it hotter, add more siracha. To make it less hot, add light mayo. Add a tablespoon of lemon juice for some zest. 


4. Unwrap package of imitation crab. Line up the crab on a cutting board and cut crab into about half inch pieces as pictured. 


5. In a small bowl mix the spicy mayo with the crab. Taste a sample to make sure is yum!


6. I prefer to serve the crab and cucumber side by side. Sprinkle some sesame seeds over crab. Put in fridge before serving for a nice cold appetizer. Prepare for your guests to be WOWed!
