I tried to combine my love for Cookie Dough with my passion for whole foods. AKA I wanted to eat Cookie Dough and not blow up like a balloon or get diabetes. The result was good, definitely not your standard sugary cookie dough but it did it's job. This recipe is grain-free, raw, no-bake, processed sugar-free, dairy-free, flourless, and except for the dark chocolate chips - it's Paleo and Vegan. It is slightly high in fat but its "good fat", if that's even a real thing. In my book it's a clean cheat ;).


Prep Time: 5 minutes
Wait Time: Minimum 1 hour
Makes: 1 small dish
INGREDIENTS:
1 1/2 cups almond flour or coconut flour
6 tablespoons melted coconut oil or sunflower seed oil
3 tablespoons coconut milk
2 tablespoons raw honey, agave or maple syrup
2 tsp vanilla extract
1/2 cup dark chocolate chips
INSTRUCTIONS:
1. Gently combine ingredients in a bowl or small serving dish
2. Mix just enough to get fluffy "dough" texture
3. Add in dark chocolate chips
4. Refrigerate for at least 1 hour or more
5. Serve in a small tub, a serving dish, or cut up into small cubes for no reason like I did
