Paleo Chicken Pesto Fettuccine with Cappello's

Paleo Pasta? Yes, it exists! Cappellos Gluten Free created Paleo-approved pasta and it's pure genius. The processed and bleached flour of typical pastas scare me. Cappellos' main ingredients are almond flour and cage-free eggs. I was pleasantly surprised that they ship their pasta in a cooler and their products need to be refrigerated. In my opinion that's a sign of a healthy and fresh product. It tastes great and cooks quickly, too! Bravo, Cappellos.


I don't know about you, but I love pesto sauce. The basil leaves are refreshing and it's a good change from tomato sauce. I meal-prepped this Chicken Pesto Pasta with Cherry Tomatoes for lunch and was beyond satisfied. It tasted amazing, cooks in under 10-minutes, and is around 400 healthy calories! You can totally use a different type of pasta with this recipe, such as whole grain. Enjoy!


Chicken Pesto Pasta with Cherry Tomatoes

Prep Time: 5 minutes 

Cook Time: 10 minutes 

Makes 2 servings

INGREDIENTS:

PESTO SAUCE:

2 cups basil leaves

2 cloves garlic

1/4 cup pine nuts

2/3 cup olive oil or oil of choice

OTHER: 4 ounces Cappellos Fettucinne or other 

4 ounces chicken (I like to purchase chicken breast strips as they are less work to prepare!)

1 cup cherry tomatoes 


INSTRUCTIONS: 

1. Combine pesto ingredients in a blender to create pesto sauce.

2. Cut chicken into small strips and cut cherry tomatoes in half.

3. Add coconut oil to pan and cook chicken strips on medium until golden. Add cherry tomatoes to pan for a few minutes.

4. For Cappellos Fettucinne, boil water in a pot and add pasta. Cook for only 60 seconds! Drain pasta and mix with pesto sauce. 4. Combine chicken and cherry tomatoes with the pesto pasta.

6. Enjoy this grain-free, gluten-free, Paleo pasta meal!
