
If you love the flavor of pancakes as much as I do and are looking for a healthier alternative, you've come to the right place. I was wildly inspired by the idea of combining Paleo ingredients and pancakes. I think it's so exciting that you can eat grain-free and still enjoy mouth-watering pancakes.
The recipe for this post was inspired by @purenaturalgurl on Instagram (follow her!). This recipe has a slightly different texture than normal pancakes because there is no flour, sugar, or butter. But it's definitely delicious, low calorie, and easy to make. I like how simple and clean this recipe is. The two main ingredients are eggs and bananas. There are multiple recipes that use coconut flour and almond flour but I've yet to try them. I love making these and you will too!
*Note: I calculated the calories for this recipe and for 3 small pancakes it's only around 300 calories! SO guilt-free.
Prep Time: 5 minutes
Cook Time: 15 minutes
Makes 3 small or 2 medium size pancakes
INGREDIENTS:
1-2 bananas
2 eggs
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
A few dark chocolate chips (optional)
Honey or Maple syrup
INSTRUCTIONS:
1. Mash one whole banana and 2 eggs together. Blend them well together in a bowl with a whisk.
2. Add in other ingredients and mix well.
3. Lightly oil a frying pan and set on medium heat.
4. Pour a small to medium amount of the mixture and let it cook for a few minutes on each side. Note: these pancakes take a little longer than normal pancakes because they are flourless.
5. Add a few dark chocolate chips, a few slices of banana or another fruit, and drizzle on maple syrup or honey.
6. Enjoy these grain-free, gluten-free, flourless, low calorie pancakes!
