Spicy Shrimp Lettuce Wraps



Yes, you could say I have a slight obsession with spicy mayo. Doesn't everyone? Especially mixed with shrimp - to die for. I first discovered that I loved spicy shrimp many years ago on a trip to Bahamas at the renowned restaurant Nobu. My friends and I ordered their Rock Shrimp appetizer and couldn't get it off our minds. We had never tasted anything like it before. When I got home tried to look up many recipes but couldn't find it. After learning how to make spicy mayo, I've found a way to make a non-fried version of this shrimp. I've prepared this spicy shrimp on a bed of lettuce, in tortillas for taco-night; but my favorite is when I combined it with a fruity lettuce wrap. You could also use this exact recipe but substitute lettuce wrap for a tortilla. I have tried both but I found the lettuce wrap recipe is clean, refreshing, and light. Also you can taste the flavors even better.

Cook time: 5-7 min

Makes 4-6 Wraps

INGREDIENTS:

Spicy Mayo:

1 cup light or regular mayo (Substitute half of it for Greek yogurt for healthier choice)

1/4 cup Siracha 

2 tablespoons honey

Lettuce Wrap:

Large Romaine or Bib lettuce for wrap

14-18 Large Shrimp 

2 Avocados

2 mangos

2 tomatos

2 limes

1 red onion

1/2 cup green onion (optional)

INSTRUCTIONS:

1. Thaw out shrimp & de-tail if needed. 

2. Combine ingredients for spicy mayo in small bowl. Mayo should be a nice orange. 

3. Wash and display lettuce wrap of choice.  

4. Chop avocado, mango, and tomato into small cubes. Insert small handfuls of each fruit into the lettuce wraps.

5. Line a pan with oil of choice. Cook shrimp in a pan on medium heat for 5-7 minutes until shrimp is pink and opaque.

6. Add spicy mayo in the pan until the shrimp have a nice orange and almost fried look. Sprinkle shrimp with chopped green onion. 

7. Add a few shrimp to lettuce wraps and squeeze limejuice over. 

8. Best to serve when shrimp is warm or hot. Enjoy!
