I'm no Soup Nazi, but I love to puree vegetables for some odd reason. I definitely don't eat nearly as many vegetables as I should. They provide the best nutrients; but I can't say they are something I crave. Pureeing vegetables has been one of the most satisfying ways to consume vegetables for me! The other day I saw that my dad bought a few sweet potatoes, so I threw them in the oven for a while. After I took them out I simply blended them with water, cinnamon, and garlic. The flavor of a pureed sweet potato is actually out of this world. You can actually just eat the pureed sweet potato and it's just as satisfying. SO delish. A few days later I pureed boiled broccoli mushrooms, and garlic out of curiosity. It literally tasted like a "Cream of Broccoli" soup. These pureed soups are Vegan and Paleo as well! I'm happy I've discovered a way to get more nutrients and will be experimenting with more veggies soon :)
Note: If you want more liquidy soup, add more water!
PUREED SWEET POTATOE SOUP:
Prep Time: 5 minutes
Cook Time: 30 minutes
Makes 3-4 servings
INGREDIENTS:
1/2 teaspoon cinnamon
2 cloves garlic chopped
2 sweet potatoes
INSTRUCTIONS:
(I baked the sweet potatoes, but you can also boil them peeled & cubed)
1. Bake sweet potatoes around 250 degrees for 25-30 minutes.
2. Take the skin off the sweet potatoes - it should come off fairly easily.
3. Blend together the sweet potato, cinnamon, and garlic. Add 1-2 cups water.
4. Enjoy this delicious and nutritious soup!
PUREED MUSHROOM BROCCOLI SOUP
Prep Time: 5 minutes
Cook Time: 15 minutes
Makes 3-4 servings
INGREDIENTS:
1/2 box of mushrooms
2 large broccoli heads
3 cloves garlic
INSTRUCTIONS:
1. Boil broccoli, mushrooms, and garlic for 10-15 minutes.
2. Blend together the ingredients and add 1-2 cups of water.
3. Savor this healthy "Cream of Broccoli" soup!
