Zucchini Cakes

My aunt and I have been using Blue Apron, a company that ships exact groceries needed for an awesome recipe, and this one has been my favorite so far! 

These "Summer Squash Cakes" seriously taste so good and are pretty healthy. Plus it only took 1 zucchini to make 6 cakes. Next time I will try to make the recipe "Paleo" and I will substitute the "Matzo Meal" (a grain) for eggs or almond flour.

Serves: 2

Total Time: 30 minutes.

INGREDIENTS:

1 zucchini

1 Cage Free Egg

1-2 dates

1/3 cup Matzo Meal or flour

2 gloves garlic or 2 tablespoons minced garlic

Olive or Coconut Oil

Salt & Pepper

INSTRUCTIONS: (interpreted from Blue Apron)

1. Grate the zucchini with a spiralizer or grater. Transfer zucchini to strainer and press liquid out of zucchini. The goal is to get the most water out of zucchini as possible. Transfer to a bowl.

2. Finely chop garlic and dice the dates.

3. Add garlic, zucchini, dates, egg, and Matzo Meal to a bowl and stir. Add salt and pepper. 

4. Allow to set aside for 5 minutes. Form the mixture into 6 quarter inch thick patties. 

5. In a pan, heat two tablespoons of oil on medium-high for a few minutes.

6. Add the zucchini cakes and cook 3 minutes per side or until lightly browned.

7. Season with salt and pepper if preferred. Enjoy :)
